Baked Egg & Veggie Mini Muffins

2 egg whites
3 oz broccoli
1 oz fresh shiitake mushrooms
½ oz spinach
1 tbsp no salt tomato paste
1/8 tsp dried basil
* Preheat oven to 350 degrees
* Finely chop broccoli & mushrooms
* Add 2 tbsp water to pan, heat and add broccoli. Cover and steam until softened, add more water as needed.
* Add shiitakes, steam until softened. Add spinach in last minute of steaming.
While veggies are steaming, whisk eggs, paste and basil. Once veggies are softened mix into the egg mixture.
Pour into mini muffin tray and bake ~20 minutes at 350 degrees, or until eggs are set and cooked.
Makes 16 minis.
